With vitamin A rich carrots and yams, vitamin C rich orange, and anti inflammatory garlic and ginger, this creamy (but dairy-free) root vegetable soup supports healthy skin cell turnover from the inside out while also reducing redness and inflammation in acne-prone skin. 1 cup raw cashews
7 medium carrots, chopped
1 large garnet yam, peel and cubed
2 tablespoons olive oil
3 cloves garlic, diced
1/2 white onion, chopped
1 large orange, peeled
2 cup low sodium vegetable broth
2 tablespoons finely chopped ginger
1/2 teaspoon ground black pepper
4 tablespoons raw sunflower seeds
- Step 1: Soak the cashews in water and let sit for 30 minutes. Meanwhile, boil the carrots and the yam in water until soft, about 20 minutes.
- Step 2: In a separate pan, saute the garlic and the onion in the oil, over medium heat, until slightly browned, about 5-7 minutes.
- Step 3: Drain the carrots, yam, and cashews and transfer to a food processor. Add the garlic, onions, orange, vegetable broth, ginger, and pepper and puree until smooth.
- Step 4: In a dry skillet, toast the sunflower seeds until fragrant and slightly golden.
Divide the soup into 4 bowls and top each with 1 tablespoon of the toasted sunflower seeds. Enjoy!
